also visually appetising. The skills to produce such food can
only be gained through knowledge and practical experience.

would like help in order to prepare nutritional tasteful food, a

wide spectrum of information and practical tips based on the
relative subject. All courses involve practical application and
everything you create is available for you to take home and
keep.

COURSES AT A
GLANCE
BARBECUES
It will not be long before we consider
lighting those barbecues and enjoying the delights of
alfresco dining. This 4 week course is designed to give you
new and innovative ideas to spice up the concept of eating
outdoors. Everything from Mediterranean Prawns to
Marshmallows – you will gain the experience and be armed
with tips, to enable you to prepare mouth-watering food that
your guests will most certainly want the recipes for.
CHILDREN'S
PARTIES
Any parents who have children under the
age of ten will know how difficult it is to entertain their
children’s friends. So often the ideas just will not come
to mind. On this 4 week course we explore the different
foods that children love to eat and design newly developed
recipes that your children will want time and time again.
Novelty snacks and savouries that are both nutritious and
eye catching. Not a course to be missed.
CAKES
AND PASTRIES
On this 4 week course we look at many
different styles of cakes and pastries, many of which are
surprisingly very economical to prepare. From recipes where
you “throw it all in for speed” to those where the amount of
each ingredient is crucial. If you are experiencing
problems with lightness or texture, or would just prefer to
produce your own cakes at a fraction of the shop prices,
this is the course for you.
CAKE
DECORATION
Ever wondered what it would be like to
decorate your own cakes just like you see in the baker’s
window. Well if you are ‘art-orientated’ and would like to
create wonderful designs in royal icing and pastillage, why
not come along and learn the techniques. On this 3 week
course we spend time learning how to marzipan and ice a
cake, use an icing bag, filigree, styled icing and create
run-outs and models that can be used to decorate it.
ENTERTAINING
When it comes to friends and relatives
visiting, we all know how to entertain them. But
occasionally, there is that special occasion when you want
to push the boat out and produce something really special.
This 4 week course is geared for such occasions. We will be
looking at the way we choose the menu, considering aspects
like colour, texture, taste, style and nutrition. The way
we lay the table for such an occasion and what wines are the
most suitable for the menu you have chosen, together with
the way each item should be served. Each person will be
asked to complete a practical test following the course to
ensure that they are happy dealing with such an occasion.
XMAS
“We wish you a Merry Christmas” is the
sentiment behind this course. Scrumptious savouries,
tantalising appetisers and wonderful cakes and pastries are
among a bouquet of goodies to be explored on this course.
The 3 weeks are spent preparing homemade delights that can
be offered to your friends and family for Christmas. We
also look at festive drinks like mulled wine and definitely
get to grips with roasting that giant bird.
Christmas will definitely have a new culinary meaning to you
after the completion of this course.
MEAT
AND FISH
On this course we look at the different cuts
of meat, including offal, different types and styles of
presenting fish, together with the most appropriate sauces to
serve with it. This subject has a vast vocabulary and you are
advised to attend the Monday class if at all possible in order
to gain the most knowledge. This subject also carries a Food
Safety Act session because of the importance placed on the
cooking of certain items.
PRESENTATION AND GARNISHES
There is a culinary metaphor that says: ‘we
eat with our eyes’. Special celebrations demand just that
little bit of extra time spent making them look good. On this
course we look at the varying ways of presenting food in order
to make it more appetising. We also look at the different
garnishes that can be created to enhance the food, including cut
outs and models made with fruit and vegetables. If you’re
looking for ideas to make your party food look extra special –
don’t miss this course.
VEGETARIAN
More and more people are either becoming
vegetarians, or preferring to eat vegetarian food from time to
time as a way of varying their diet. However, it is sometimes
difficult to come up with new ideas or to find a way of
providing a vegetarian meal for one or more of your guests, that
will fit in with whatever your other guests are having. On this
course we look at the spectrum of vegetables and salad that is
available, and create some mouth-watering dishes that will amaze
you.
DESSERTS
Often we get to this stage of a meal and just
cannot find the room to eat any more. It is therefore little
wonder why we often resort to just providing cheese and
biscuits. However, the world of desserts is truly awe-inspiring
and there is a dessert that is appropriate for every situation.
We will be looking at light desserts, rich desserts, heavier
desserts and even those that are more suitable for those of us
who are trying to shed a few pounds. Well worth attending to
see what you may have missed.
