Pastry Cases
 150 g Self Raising Flour
 75 g Margarine
 Ice cold water to mix
Filling - Crumble
 100 g Self Raising Flour
 25 g Ground Almonds
 50 g Demerara Sugar
 50 g Margarine
Filling - Apple
 240 g Cooking Apple
 25 g Butter
 25 g Caster Sugar

Melt the butter and sugar in a saucepan over a low heat and add the peeled, cored and sliced apple. Put a lid on the saucepan.

When the apple is soft and tender, remove from the heat and allow to cool on one side.

Add the flour and margarine to a bowl, blend until crumbly and then adding a little ice cold water at a time, bind together the pastry.

Roll out the pastry on a floured surface and then, using a 8cm pastry cutter, cut out your 12 bases. Gently push them into each of the sections of your bun tin.

In a bowl, add the flour, ground almonds, demerara sugar and margarine. Gently rub the mixture together until it becomes light and crumbly. (Do not add water).

Assembly

Preheat your oven to 180ºC, Gas mark 6.

Put a teaspoon of apple into each of the pastry cases and top with a dessert spoon of crumble mix.

Pace the tray on to the middle shelf of the oven and bake for approximately 15 minutes. Remove from the oven and allow the tray to cool for 10 minutes before serving.
