Guacamole - The best recipe ever to be created from the Avocado - so versatile and so so tasty - from dips to sandwich fillings!!
Dip the tomato into boiling water for 10 seconds - remove from the water and peel off the skin. Use a chopping knife to severely chop the tomato until you left with mainly tomato juice.
Cut the avocados in half, remove the skin and then place the fruit into a bowl with the tomato.
Add the squeezed juice of the lime, the chopped coriander leaves and the finely diced red onion. Finally add the deseeded chopped chilli.
Using a whisk or food processor, mash all the ingredients together. Refrigerate until ready to serve.
