Baked Parsnips. Interesting alternative to traditional Parsnips.

Baked Parsnips

 1 kg Parsnips
 50 g Margarine or Butter
 75 g Grated Cheddar Cheese
 2 tbsp Single Cream
 2 tbsp Breadcrumbs
 25 g Grated Parmesan
 1 tsp English Mustard
 Seasoning

Peel and Boil Parsnips and then mash them.

Baked Parsnips

Beat in the margarine or butter, cream, mustard and seasoning.

Grease an ovenproof dish and spread half the mixture into the dish.

Sprinkle on half of the grated cheddar cheese and then add the rest of the mixture.

Finally, sprinkle on the remainder of the cheddar cheese, sprinkle on the breadcrumbs and then finish off with the grated parmesan.

Bake in the oven, 140º for 20 minutes.
