Banana, Orange & Apricot Cake. This combination of fruit works well together producing a moist cake with an extremely light texture.
Pre-heat the oven to 130ºC, Gas Mark 2.
Cream together the margarine and caster sugar in a bowl.
Add the eggs, one at a time beating vigourously and then add the vanilla essence.
Fold in the flour and the zest from orange. Add the squeezed juice from the orange and combine into the mixture.
Peel the banana, cut the banana into 1cm slices and add to the mixture, folding in gently.
Snip each apricot into 3 pieces and and add to the mixture, folding in gently.
Bake in a lined loaf tin on the middle shelf of the oven for 1 hour.
When the cake is cooked, remove from the oven and allow to cool for 5 minutes. Dust with Icing Sugar.
