Banana Pudding

Another recipe from my Auntie Moyra. A scrumptious pudding that's easy to make and designed to warm you up on a cold winter's day.

Banana Pudding

 125 g Margarine
 125 g Caster Sugar
 175 g Self Raising Flour
 1 Egg
 0.50 tsp Baking Powder
 1 tbsp Milk
 2 Bananas (Riper the better)
 2 tsp Lemon Juice

Lightly grease and flour a pudding basin (850ml).

In a mixing bowl, mix together the margarine and sugar until light and creamy. Add the egg and milk and continue to mix. Stir in the flour and baking powder.

In a separate bowl, mash the bananas and lemon juice, stirring together. Add to the creamed mixture and stir well.

Put the mixture into the pudding basin, cover with greaseproof paper or foil, and steam for 1 hour.

Delicious served hot with custard sauce.
