Beef Stew with Dumplings. A truly British favourite. Comfort food at its best for those cold blustery nights.
Pre heat oven to Gas mark 5, 170ºC.
In a medium sized saucepan over a moderate flame, add the oil. Wait until the oil is hot, then add the diced beef. Simmer for 5 minutes.
Add the diced onion, tomato puree, garlic & seasoning. When mixed, add the carrots, swede & mushrooms. Simmer for 5 minutes.
(As an extra vegetable to add further colour you can also add sliced red peppers)
Add the plain flour & mix well. Gradually add the beef stock, stirring occasionally, to form the sauce.
Transfer the mixture into a casserole dish with a lid & place on the middle shelf of the oven, cooking for 75 minutes.
Meanwhile, into a mixing bowl put the self raising flour and suet, mix and gradually incorporate the milk to form a paste. Refrigerate.
After 75 minutes, remove the stew from the oven. Using an ice cream scoop, portion out the dumpling mix on top of the stew.
Replace the lid & continue to cook in the oven for a further 20-30 minutes.
Serve immediately.
