Braised Mushrooms with Mascarpone and Spinach

A delicious creamy mushroom starter or main course with an Italian slant.

Braised Mushrooms with Mascarpone and Spinach

 50 g Butter
 1 Medium Onion (finely diced)
 2 Cloves of Garlic (grated)
 1 tsp Sea Salt
 0.50 tsp Cracked Black Pepper
 700 g Closed Cup Chestnut Mushrooms (halved)
 1 tbsp Plain Flour
 5 fl oz Milk or Cream
 250 g Mascarpone
 Egg
 100 g Fresh Baby Spinach
 125 g Mozzarella
 Toasted Ciabatta for garnish

Melt the butter in a large pan over a moderate heat.

Add the onion, garlic, salt & pepper & simmer for 2 minutes. Then add the mushrooms & cook for a further 5 minutes.

Sprinkle the flour over the mixture & then add the milk/cream & mix well.

Add the mascarpone to the sauce.

Crack an egg into a cup & mix with a fork. Add the egg to the sauce, stirring all the time.

Pre heat oven to 140ºC.

Add the spinach to the mixture making sure that it is all folded into the sauce.

Pour the mixture into a large casserole dish & scatter the diced mozzarella on top. Place the dish onto the centre shelf of the oven & cook for a further 10 minutes.

Remove from oven & serve immediately with slices of toasted ciabatta.
