Cauliflower au Gratin

Cauliflower au Gratin (commonly referred to as cauliflower Cheese). A Vegetarian Dish that is pleasing to all no matter what your culinary preferences.

Cauliflowern Cheese

 1 Cauliflower (Medium Sized)
 50 g Butter
 50 g Plain Flour
 0.50 tsp Salt
 0.50 tsp Ground Black Pepper
 1 tsp English Mustard
 1 pt Milk
 100 g Mature Cheddar Cheese (grated)

Remove the outer leaves from the cauliflower. With the cauliflower sitting on base, cut the cauliflower into 8 sections.

Put the cauliflower into a medium sized saucepan, cover with water, add a little salt and bring to the boil. Simmer for 5 minutes. Remove from the heat, drain and set to one side.

In a separate saucepan over a moderate heat, add the butter and allow to melt. Then add the flour, salt, pepper and mustard and blend into a paste.

Gradually add the milk, a little at a time, and using a whisk, continually whisk until the roux becomes a sauce.

Add half of the grated cheese and whisk until absorbed.

Put the blanched cauliflower into a medium sized casserole dish and pour the sauce over the top.

Sprinkle the remaining grated cheese over the top.

Place the dish under the grill to allow the sauce to gratinate (golden brown). Serve immediately.
