Chicken Goujons - Juicy filets of chicken wrapped in a golden crispy coating of breadcrumbs and oats. Serve hot with a dip of your choice.
Heat up your fryer (or frying apparatus) to 180ºC, or HIGH.
Cut your chicken breasts in to slices no thicker than 1cm.
In the first a bowl add the flour. In the second bowl add the milk and egg and whisk together. In the third bowl add the breadcrumbs and oats mixed together.
Take each slice of chicken and firstly coat in flour, then dip into the egg mixture and finally into the crumb making sure the slice of chicken is completely covered.
Deep fry the slices for no more than 3 minutes, or until golden brown.
Serve immediately with a dip of your choice. (My favourite is madras which can be easily made by whipping together mayonnaise with a little madras curry powder and a squirt of lemon juice).
