Chicken Lettuce Wraps with Jamaican Jerk - with only 270 calories per wrap, an ingenious way to reduce the carbs.

 8 Large Lettuce Leaves (Iceberg works well)
 2 Chicken Breasts (cut into medium dice)
 12 tbsp Jamaican Jerk Seasoning
 0.25 cup Chopped Peanuts
 3 Spring Onions
 2 cups Coleslaw
 1 Lime
 4 tbsp Mayonnaise
Jamaican Jerk Seasoning
 1 tbsp Onion Powder
 1 tbsp Garlic Powder
 2 tsp Cayenne Pepper
 2 tsp Paprika Pepper
 1 tsp Allspice
 2 tsp Salt
 1 tsp Ground Black Pepper
 0.50 tsp Red Pepper Flakes
 0.50 tsp Ground Cumin
 0.50 tsp Ground Nutmeg
 0.50 tsp Ground Cinnamon
 1 tbsp Brown Sugar
 1 tsp Dried Thyme
 1 tbsp Dried Parsley

Spray a nonstick frying pan with cooking spray and heat over medium heat.

Sprinkle 1 or 2 tbsp of the Jamaican jerk seasoning over the chicken and toss making sure each piece is generously seasoned. Add the chicken to the skillet and cook for a few minutes. It will cook quite quickly, in about 5 to 7 minutes or so because pieces are fairly small.

Make the sauce by mixing together the mayonnaise with a bit of Jamaican jerk seasoning.

To assemble the lettuce wraps, top each lettuce leaf with some of the coleslaw mix, chicken, chopped spring onions, peanuts and drizzle with a bit of the mayo sauce. Then roll up the leaf to eat.
