Coleslaw Salad

A delicious and healthy side salad - ideal for accompanying Fish or Meat, or as a garnish in sandwiches.

 1 Medium White Cabbage
 400 g Carrots
 400 g White Onions
 0.50 tsp Salt and Pepper
 250 ml Low Fat Mayonnaise

Trim the White Cabbage, Peel the Carrots and remove the skin from the Onions.

Using a food processor, Slice the cabbage and grate the carrots and onions into a large bowl.

Add the salt and Pepper and blend in the Low fat Mayonnaise.

If serving as a salad, refrigerate for 1 hour before serving. Garnish with Salad Cress or Rocket Leaves.
