Coronation Chicken - Succulent Poached Chicken Breast marinated in a Madras Mayonnaise with Pineapple, Raisins and Coconut. Delicious!!

 600 g Chicken Breast
 Salt and Pepper for Seasoning
 350 g Premium Mayonnaise
 1 tbsp Madras Curry Powder
 240 g Tinned Pineapple (Drained and Diced)
 50 g Raisins
 1 tbsp Desiccated Coconut

Preheat your oven to 150ºC, gas mark 3.

Place the chicken breasts into a small ovenproof dish, add a quarter cup of water, add a sprinkle of salt and pepper and cover the dish with foil.

Place the dish in the oven and cook for 45 minutes.

Remove and allow to cool.

In a mixing bowl add the mayonnaise, madras curry powder, raisins, coconut, diced pineapple and 3tbsp of the pineapple juice.

Whisk together.

When the chicken has cooled, cut the chicken breast into 2cm dice.

Add the chicken to the sauce and blend well.

Refrigerate for 30 minutes before serving.
