Crispy Potato Pancakes, simple to make. For an alternative, choose the Potato Waffles.

Potato Pancake

 2 Eggs
 2 tbsp Plain Flour
 0.25 tsp Baking Powder
 0.25 tsp Salt
 0.25 tsp Black Pepper
 6 Medium Potatoes (Peeled and Grated)
 0.50 cup Onion (Finely Chopped)
 0.50 cup Vegetable Oil

In a large bowl, beat together the eggs, flour, baking powder, salt and pepper.

Add the grated potatoes and onion to the mixture.

In a large frying pan, heat the oil over a medium heat.

Place (2 tablespoon size amounts) of the potato mixture to the frying pan and press down with a spatula to flatten. Allow to cook for 3 minutes and then turn the pancakes over and allow to cook for a further 3 minutes. Remove from the oil and drain. Serve immediately.
