Guard’s Pudding

Guard's Pudding was traditionally served to the officers & guards on duty at St James Palace or Whitehall. A true comfort food with an extremely light texture.

 125 g Margarine
 125 g Brown Sugar
 0.50 tsp Bicarbonate of Soda
 60 g Wholemeal Breadcrumbs
 65 g Oats
 2 Eggs
 1 tbsp Golden Syrup or Honey
 18 g Dried Ginger

Prepare a 15cm (2 pint) pudding dish, grease & flour the surfaces.

Blend the margarine & sugar together until creamy.

Add the eggs, one at a time, & blend well.

Fold in the bicarbonate of soda, breadcrumbs, oats, ginger & honey/golden syrup. Do not over mix.

Place the mixture into the prepared pudding dish & cover with foil. Place the pudding dish into a pre heated steamer & cook for 90 minutes.

When cooked, turn out the pudding & serve with fresh cream.
