Simple to make with toppings of your choice. After making your own you are unlikely to buy one from a shop again.

Home-Made Mediterranean Pizza

Dough
 650 g Strong Flour
 2 tsp Salt
 7 g Dried Yeast
 325 ml Warm Water
 50 ml Warm Milk
 25 ml Olive Oil
Topping
 350 g Tomato Passata
 175 g Grated Cheddar Cheese
 2 tsp Dried Oregano
 1 Medium Sliced Red Onion
 1 Large Sliced Red Pepper
 175 g Sliced Mushrooms
 120 g Pitted Olives (black or green or mixed)
 125 g Sliced Mozzarella
Dough

In a large mixing bowl add the flour & salt.

In a separate mixing bowl add the milk, water & yeast & mix together. Add the oil to this liquid.

Pour the liquid into the flour. If you have a food mixer use the K-Beater to beat the mixture on hight speed for 1 minute which forms part of the kneading process. If you are doing this by hand, put the dough onto a floured surface & knead the dough using the palms of your hands for approximately 5 minutes.

Leave the dough in a bowl covered with a clean cloth , in a warm place & allow to prove for 1 hour.

After 1 hour, split the dough into 6 equal parts & roll out into a shape of your choice. The dough should be no more than 0.5cm thick.

Topping

While waiting for the dough to prove prepare the vegetable toppings.

Pre heat oven to 160ºC, Gas mark 4.

Spread the Passata on to the dough & sprinkle the grated cheddar on top. Add a sprinkle of oregano & scatter the onions, peppers, mushrooms & olives on top. Finally, add some slices of Mozzarella.

Bake on the middle shelf of the oven for 15 to 20 minutes.
