Macaroni Cheese. A Pasta Favourite - "It's all about the sauce", rich and creamy cheese sauce with a hint of english mustard.

Macaroni Cheese

 200 g Macaroni
 50 g Butter
 50 g Plain Flour
 1 tsp English Mustard
 0.50 tsp Salt
 0.25 tsp Ground Black Pepper
 1 pt Milk
 100 g Mature Cheddar Cheese

Boil a pint of slightly salted water in a saucepan, add the macaroni and simmer cook until the macaroni is soft. When cooked, drain and put to one side.

In a separate saucepan over a moderate heat, add the butter, flour, salt, pepper and mustard and blend into a paste.

Gradually add the milk, just a little at a time and mix well throughout.

Finally add half of the grated cheese and whisk into the sauce until totally melted.

Now add the macaroni to the sauce and transfer to a small casserole dish. Sprinkle the remainder of the grated cheese over the top and place under a hot grill to gratinate.
