Place muffin cases into a 12 slot muffin tray.
Pre heat oven to 180ºC, Gas mark 6.
Melt the butter & put to one side.
In a mixing bowl, add the flour, ground almonds, bicarb, baking powder, sugar & orange zest. Blend together.
Put the orange juice, milk & egg in a jug & whisk together.
Pour the liquid into the bowl with the other ingredients & mix together with a fork. (It is important to do this by hand - do not use a mixing machine).
When you have finished mixing, the mixture will look very lumpy. This is exactly what you are looking for.
Spoon the mixture equally into the muffin cases & place your muffin tin on the centre shelf of the oven for 15 to 20 minutes. Remove from oven & allow to cool.
