Pancakes with Blackberries and Raspberries

American Style Pancakes served with Blackberries and Raspberries, finished with Maple Syrup and Fresh Double Cream.

 1.50 cups Buttermilk
 3 tbsp Cooking Oil
 0.50 tsp Bicarbonate of Soda
 2 tsp Baking Powder
 2 tbsp Granulated Sugar
 1 pinch Salt
 1 Egg
 1.75 cups Plain Flour
 500 g Mixed Berries
 200 g Maple Syrup
 300 g Fresh Double Cream
 Butter for Frying

Add all the ingredients to a large bowl and whisk vigourously.

**Please note that the batter for American Pancakes is much thicker in consistency than that for Crêpes to allow for the rise.

The batter is sufficient to produce 12 pancakes (x 10cm)

American Pancakes are best made using a griddle. However you can use an alternative method, either in a small omelette pan or frying pan. Apply heat and get your cooking surface moderately hot.

Grease your heated surface with a knob of butter. If the butter sizzles, the surface is hot enough and ready to use.

Pour sufficient of the mixture to form a 10cm circle of batter.

After 2 minutes, either flip or turn the crêpe using a palette knife to cook the other side. After a further 1 minutes, remove and transfer to a serving dish.

Stack the pancakes 3 high on the serving plates. Top with the mixed berries and drizzle over the maple syrup. Serve with Fresh Cream.
