Rich Banana Cake - Considering bananas are quite a heavy fruit, this recipe turns out incredibly light in texture and oozes the flavour of banana without having to use essence.

 100 g Margarine
 100 g Caster Sugar
 2 Eggs
 200 g Self Raising Flour
 2 Medium Sized Bananas

Preheat your oven to 140ºC.

Cream the margarine and sugar in a mixing bowl. Add the eggs, one at a time, until consolidated.

Peel the bananas and mash the fruit using a fork.

Add the flour and mashed banana to the mixing bowl and consolidate the ingredients at a slow speed.

Transfer the mixture to a lined 8" cake tin. Cook on the middle shelf of the oven for 60 minutes.

When cooked, allow to cool for 15 minutes before serving.
