Rinse the chicken with cold running water, drain & place in a roasting pan.
Rub the breast & legs with softened butter & season.
Place on the middle shelf of the oven, pre heated to 100ºC, Gas mark 1/4, & cook for 2 hours.
To test if the chicken is correctly cooked, place a knife between the breast & the leg & separate. Any juices seen must be free of blood.
