Rock Cakes

A war time recipe when ingredients like eggs & sugar were scarce. Delicious served warm.

 400 g Self Raising Flour
 12 g Baking Powder
 125 g Brown Sugar
 200 g Margarine
 200 g Mixed Dried Fruit
 5 fl oz Milk
 1 tsp Vanilla Essence
 1 tsp Almond Essence
 Glace Cherries for decoration (optional)

In a mixing machine bowl, add the self raising flour, baking powder, 100g of the sugar, margarine & mixed fruit. Mix on a slow speed bringing all the ingredients together.
(If you do not have a mixing machine this process can be carried out by hand).

Add the milk, vanilla & almond essence to the mixture & continue mixing until the ingredients have all bound together.

Using a dessert spoon divide the mixture into 18 equally sized mounds onto a non stick baking tray.

Add a glace cherry to the top of each cake, sprinkle the tops with the remainder of the sugar, & bake in a medium hot oven, preheated to 180ºC for 15 to 20 minutes.
