A war time recipe when ingredients like eggs & sugar were scarce. Delicious served warm.
Preheat oven to Gas mark 6, 180ºC.
In a mixing machine bowl, add the self raising flour, baking powder, 100g of the sugar, margarine & mixed fruit. Mix on a slow speed bringing all the ingredients together.
(If you do not have a mixing machine this process can be carried out by hand).
Add the milk, vanilla & almond essence to the mixture & continue mixing until the ingredients have all bound together.
Using a dessert spoon divide the mixture into 18 equally sized mounds onto a non stick baking tray.
Add a glace cherry to the top of each cake, sprinkle the tops with the remainder of the sugar, & bake in the oven for 15 to 20 minutes.
