Curried Vegetable Rice
In a saucepan of slightly salted water, place the carrots, broccoli and sweetcorn and bring to the boil. Remove from the heat, refresh under cold water and allow to drain
In a separate saucepan of boiling salted water, add the rice and simmer cook until the grains are tender.
In a mixing bowl, mix the mayonnaise, madras curry powder and seasoning together.
Now add the vegetables and rice and blend well.
Simple, but well tasty!
200g Basmati Rice
1 tbsp Madras Curry Powder
120g Chopped Carrots
120g Chopped Broccoli

Cut off the root of the lettuce and separate all the leaves - do not chop.
Cut the cucumber (skin on) into large wedges.
Top and tail the tomatoes and cut into wedges.
Cut the Feta cheese into 1cm dice.
To present - lay your leaves topped with the scattered cucumber, tomatoes, feta and olives.
Mix the olive oil and mint together and pour over the salad.
Excellent as a side dish!!
