Sausage Toad

Sausage Toad (or Toad in the Hole)so called because the sausages peek out of the batter. You need to get both elements right - Good quality sausages and a well made batter.

Sausage Toad

 6 Standard size Premium Sausages (not chipolatas)
 100 g Plain Flour
 0.25 tsp Salt
 3 Eggs
 10 fl oz Milk
 4 tbsp Vegetable Oil

Pre-heat oven to 180ºC.

Put the vegetable oil into a small casserole dish and sit the separated sausages on top of the oil. Place the dish into the oven for 15 minutes. (This is to precook the sausages before they are covered with cold batter).

Meanwhile, in a machine bowl, add the flour, salt, eggs and milk and whisk at high speed to remove all lumps.

Remove the sausages from the oven, pour the batter over the top and immediately return the dish to the oven.

Cook for approximately 30-40 minutes, or until the batter is golden brown.

Allow to stand for 10 minutes before cutting and serving.
