Soda Bread Rolls

Delicious home baked rolls, so easy to make, and ideal for accompanying foods as an alternative to French Bread.

 500 g Plain Flour
 2 tsp Bicarbonate of Soda
 1 tsp Fine Sea Salt
 400 ml Natural Yogurt
 A little Milk if Necessary
 Additional Flour for moulding.
 Sesame Seeds or Poppy Seeds for garnish

Preheat your oven to 180ºC or Gas mark 6

Sift the flour and bicarbonate of soda into a large mixing bowl and add the salt.

Make a well in the centre and pour in the yogurt. Mix together. The mixture should be firm and a little sticky. If extra liquid is required because the mixture is too firm, add a little milk.

Tip the dough onto a floured surface and knead for a couple of minutes to make sure all the ingredients are combined.

Roll the dough into a sausage shape, using your hands, and cut the dough into 8 equal pieces. Take each piece and roll into a ball and place on a baking tray. Sprinkle a little sesame or poppy seeds onto each roll. (It is important to get the rolls into the oven as quickly as possible while the bicarbonate of soda is still acting).

Place the tray of rolls into the oven and bake for 20 minutes. Remove and cool on a wire rack.
