Spicy Fruit and Nut Cake

Spicing things up a little here. Using dried fruits and spices can really make a cake come alive. Beware Nuts!!

Fruit and Nut Cake

 100 g Margarine
 100 g Caster Sugar
 1 tsp Almond Essence
 2 Eggs
 200 g Self Raising Flour
 50 g Ground Almonds
 1 tsp Cinnamon
 100 g Dried Prunes
 100 g Dried Apricots
 100 g Raisins
 3 fl oz Milk
 25 g Flaked Almonds
 25 g Demerara Sugar

Pre-heat your oven to 140ºC.

Line a 20cm Cake tin.

Place the margarine, sugar and almond essence into a mixing bowl and beat until light and creamy. Add your eggs, one at a time and beat into the mixture.

In a separate bowl add the flour, ground almonds and cinnamon.

Cut the dried prunes and apricots into snippets and add to the flour, together with the raisins, making sure the fruit is well coated with the flour.

Add the dried ingredients to the wet mixture, add the milk and gently blend together.

Tip the mixture into your prepared cake tin making a slight indentation in the centre to allow the cake to rise evenly. Sprinkle on the flaked almonds and demerara sugar.

Bake in the oven for 60 minutes. When cooked, place on a wire tray and allow to stand for 30 minutes before serving.
