Steamed Suet Pineapple Pudding. Delicious individual fruit pudding, quick and easy to create.

Steamed Suet Pineapple Pudding

Pastry
 150 g Self Raising Flour
 75 g Shredded Suet
 25 g Caster Sugar
 0.50 cup Milk
Filling
 220 g Tinned Pineapple Slices in Juice
 25 g Caster Sugar
 1 tsp Cornflour

In a bowl, add the flour, suet and sugar and blend together with the milk. Place on one side.

Drain the contents of the can of pineapple. Chop the slices into 1cm pieces. Add the pineapple, juice and sugar to a saucepan and bring to the boil.

In a cup, mix the cornflour with a dessert spoon of water and add to the saucepan, stirring continuously until it thickens. Stand on one side to cool.

Assembly

You will require 4 Individual Pudding Moulds.

Divide the dough into 4 pieces and on your floured surface, push down each piece, using your palm, to create a flattened circle.

Take each circle and gently line each pudding mould with the dough, remembering to pull up the sides of the dough to give you excess at the top.

Place a quarter of your pineapple mixture into each mould.

Gently wrap the excess dough over the top of the pudding.

Finally, snap on the pudding lid.

Now place the puddings into a steamer and cook for 30 minutes.

Serve with Fresh Cream or Custard.
