This delicious rich dessert originated in Venice. Tiramisu translates as "pick-me-up". It's best made a day in advance to let the flavours develop.
Combine the coffee & Marsala together in a bowl.
Beat the egg yolks & sugar in a bowl until thick & pale. Add the mascarpone & mix until just combined.
Beat the cream in a separate bowl until soft peaks form.
Fold the cream into the mascarpone mixture.
Place the egg whites into a separate bowl and beat until soft peaks form. fold quickly & lightly into the cream mixture.
Dip half the biscuits into the coffee mixture. Allow to drain slightly, & then arrange in the base of a ceramic or glass serving dish. Spread half the cream mixture over the biscuits. Dip the remaining biscuits into the remaining coffee mixture & repeat the layers.
Smooth the surface & dust liberally with the cocoa powder.
Refrigerate overnight.
