A colourful and quick side salad.
Peel & slice the onion thinly & place to one side.
Take the tomatoes, remove & discard a thin slice by the stalk. slice the tomatoes thinly, holding them with the stalk end pointing to the right.
In a small round dish, sufficient in size to take your ingredients, place the tomatoes & onions in layers, starting with the tomatoes.
In a mixing jug, place the olive oil, vinegar, french mustard & seasoning. Whisk the ingredients together thoroughly & pour over the tomatoes & onions. Refrigerate for 1 hour to allow the liquid to infuse the ingredients
