Banoffee Pie. Rich, dynamic, moreish and totally irresistible. Would grace the table of any event and relatively easy to create.
In a mixing bowl add the biscuit crumb and the melted butter and mix together.
Spoon the mixture into an 8" round false bottomed baking tin, pressing down firmly using a spoon. Push some of the mixture up the sides of the tin to form a biscuit rim.
In a medium sized saucepan over a moderate heat, add the butter and sugar, stirring all the time until the sugar has dissolved.
Add the condensed milk and bring to a rapid boil for up to 5 minutes, stirring all the time until the mixture resembles a thick golden caramel.
Spread the caramel over the biscuit base, cool and then chill in the refrigerator for one hour.
Carefully remove the filled base from the tin and set it onto your presentation dish.
Slice the bananas and fold half of them into the whipped cream and spread the cream over the biscuit base.
Decorate the top with the remainder of the bananas and finish with the chocolate shavings.
Chill until ready to serve.
