Boozy French Onion Soup

This recipe "hits the spot", using french onions laced with alcohol and finished with large croutons covered with Gruyère cheese. It is a winter dinner party *must*.

Soup
 1 kg French Onions
 25 g Butter
 2 tbsp Vegetable Oil
 0.50 tsp Black Pepper
 1 tsp Salt
 0.50 tsp Sugar
 1 tbsp Fortified Wine
 2 pt Vegetable Stock
 0.25 cup Dry White Vermouth
 1 Bouquet Garni
 2 tbsp Cognac
Garnish
 1 French Stick
 5 oz Grated Gruyere

Peel the onions and slice thinly.

Melt the butter in a large saucepan over medium heat and add the vegetable oil.

Add the onions and cook for 15-20 minutes, stirring occasionally, until they are softened and start to colour.

Add the sugar, salt, pepper and fortified wine and continue to cook for a further 30 minutes.

Add the stock, white wine and bouquet garni. bring to the boil and then simmer with the lid on for 45 minutes.

Add the cognac and serve immediately with the garnish.

Take a french stick and cut 8 x 2cm round slices from it.

Toast the slices lightly on both sides.

Pile up your grated gruyere on the slices.

Ladle your soup into soup dishes and sit two large croutons onto the top of the soup.

Place the soup dish under the grill to gratinate. Serve Immediately.
