Classic White Cob Loaf - Made with Fresh Yeast - Light and Spongy with a Medium Crust.

Country Cob Loaf

Yields1 Serving

 800 g Plain Flour
 1 tsp Salt
 25 g Fresh Yeast
 1 tsp Caster Sugar
 18 fl oz Tepid Water
 Poppy Seeds or Sesame Seeds for Garnish

Put the flour and salt in a mixing bowl. In another bowl, mix the sugar with the yeast until it turns into a liquid. Add the yeast to the tepid water and then add the liquid to the flour, beating vigorously. Cover the bowl and allow to stand and prove to double its size for one hour in a warm area.

After an hour, knock the dough back and mould into a ball. Cover and allow to prove again for 20 minutes.

Then spray the surface of the bread with cold water and sprinkle with your chosen garnish. Bake the bread in the oven for 20-25 minutes on 180ºC. Remove from the oven and allow to cool.
