Orange and Chocolate Cupcakes - what a party treat. Citrus flavoured cakes decorated with an orange butter icing and sprinkled with chocolate.
Preheat your oven to 150ºC, Gas mark 3.
Prepare a muffin tray with 8 paper cases.
Take your orange, remove the zest and set to one side. Then squeeze the juice from the orange and again set to one side.
Add the caster sugar and margarine to a mixing bowl and beat vigourously until light and creamy. Add the eggs, one at a time and continue to beat.
Add the flour, Orange Zest, Orange juice and milk, blending slowly until all the ingredients are consolidated.
Transfer the mixture equally into the paper cases and bake on the middle shelf of the oven for 20 minutes, or until cooked.
Meanwhile, in a clean mixing bowl, add the softened butter, icing sugar and orange juice and beat vigourously. Transfer the icing to an icing bag containing a star nozzle ready for piping.
Allow the cakes to fully cool. Pipe the icing onto the top of each cake and then grate the chocolate over the top.
