Quick & Easy Banana Cream Shortbread - Crushed Shortbread topped with Bananas, Fresh Cream and Mascarpone, and topped with Maple Syrup and chopped Nuts.

Banana Cream Shortbread

 50 g Butter
 25 g Demerara Sugar
 210 g Shortbread Biscuits
 200 g Double Cream
 250 g Mascarpone
 2 tbsp Icing Sugar
 2 Medium Bananas
 3 tbsp Maple Syrup
 25 g Mixed Chopped Nuts

Prepare and line a false bottomed 8 inch cake tin.

Melt the butter and add it to the shortbread biscuits and demerara sugar in a food processor. Whiz until the biscuits become a sticky crumb.

Push the crumb into the base of the prepared tin, pushing down firmly to flatten. refrigerate for 30 minutes.

Whip your cream until it appears thick enough to pipe. Then add the mascarpone and blend together.

Peel and slice your bananas and add to the cream mixture, blending by hand so as not to break up the banana too much.

Place the mixture on top of your flattened shortbread, spreading it as evenly as possible.

Finally, drizzle the maple syrup over the surface and sprinkle with the chopped nuts.
