Spiced Apple Turnovers. Semi-sweetened Bramley Apples with a hint of cinnamon, wrapped in beautifully crisp and golden brown puff pastry.
Peel, core and cut the brambly apples and put them in a medium saucepan with the butter, demerara sugar and cinnamon. Place the saucepan over a low heat to allow the apples to sweat and soften. Constantly stir the apples to avoid singeing.
When the apples are softened, remove from the heat and allow too cool.
Preheat oven to 180ºC, Gas mark 6.
Roll your pastry sufficiently sized to create 6 squares.
Whisk the egg and egg wash all the edges of each square. Then put 6 even amounts of the apple mixture onto the squares.
Take each left hand bottom corner of each square of pastry and fold over to the top right hand corner and seal gently, using the prongs of a fork.
Egg wash the turnovers. Make a slight cut/incision in the tops to allow the steam to escape whilst cooking. Sprinkle with caster sugar.
Place the turnovers onto a baking tray and bake for approximately 15-20 minutes, 180ºC, Gas mark 6.
Remove from the oven and cool before serving.
