Vegetarian Cheese Sauce Pizza with Caramelised Red Onions

Most pizzas tend to have a tomato base. Here we have changed the rules and have used a cheese sauce. Fresh Yeast bread base and toppings that compliment the sauce.

Cheese sauce Pizza

Base Dough
 800 g Plain Flour
 1 tsp Salt
 25 g Fresh Yeast
 1 tsp Caster Sugar
 18 fl oz Tepid Water
Cheese Sauce
 25 g Butter
 25 g Plain Flour
 0.50 tsp Salt
 0.25 tsp Black Pepper
 10 fl oz Milk
 50 g Grated Cheddar Cheese
Toppings
 1 Large Red Onion (Sliced)
 25 g Butter
 25 g Dark Brown Sugar
 1 tbsp Balsamic Vinegar
 300 g Mushrooms (Sliced)
 25 g Butter
 2 Garlic Cloves (Chopped)
 100 g Grated Cheddar Cheese
 250 g Mozzarella (sliced)
 Parsley for garnish

Base Dough

Makes 4 x 30cm Pizzas.

Put the flour and salt in a mixing bowl. In another bowl, mix the sugar with the yeast until it turns into a liquid. Add the yeast to the tepid water and then add the liquid to the flour, beating vigorously. Cover the bowl and allow to stand and prove to double its size for one hour in a warm area.

After an hour, knock the dough back and split into 4 pieces. Roll out the pieces of dough to 30cm circles and place on lined oven trays. Cover and allow to prove again for 20 minutes.

Then bake off the bases in the oven for 12 minutes on 180ºC. Remove from the oven and allow to cool.

Cheese Sauce

Melt the butter in a saucepan and add the flour, salt and pepper. When the mixture looks gritty and sandy, gradually add the milk to form into a sauce. Finally add the grated cheddar cheese and thoroughly combine.

Toppings

Melt the butter in a saucepan and add the sliced red onions. Cook for 2 minutes and then add the dark brown sugar and balsamic vinegar. Allow to simmer for 10 minutes to caramelise.

In another saucepan, melt the butter and add the chopped garlic followed by the sliced mushrooms. Allow to simmer for 3 minutes.

Create the Pizza

Coat the bases with the cheese sauce, followed by the caramelised onions, then the mushrooms. Finally add a sprinkling of cheddar cheese and some sliced mozzarella.

Bake the pizzas in the oven for 15 minutes on 180ºC. Garnish with chopped parsley and serve immediately.
